How to make mutton biriyani step by step
Mutton Biryani Recipe
Ingredients:
500 grams mutton (with bone)
2 cups basmati rice
3 large onions (thinly sliced)
2 tomatoes (chopped)
1 cup yogurt
2 tablespoons ginger-garlic paste
2-3 green chilies (slit)
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon biryani masala
1 teaspoon garam masala
1 tablespoon coriander powder
1 teaspoon cumin powder
Salt to taste
Fresh coriander leaves (chopped)
Fresh mint leaves (chopped)
4 tablespoons ghee or oil
Whole spices (bay leaf, cinnamon stick, cardamom, cloves, star anise)
Saffron strands soaked in warm milk (optional)
Lemon juice

Step-by-step process:
1. Marination:
In a bowl, mix mutton with yogurt, ginger-garlic paste, turmeric, red chili powder, and salt.
Let it marinate for at least 2-3 hours (overnight is best for better taste).
2. Cooking the Rice:
Wash and soak basmati rice for 30 minutes.
Boil water in a large pot, add whole spices (bay leaf, cinnamon, cardamom, cloves), salt, and a little oil.
Cook the rice until it's 70% cooked (it should be slightly firm). Drain and keep aside.
3. Cooking the Mutton:
Heat ghee/oil in a pressure cooker or heavy-bottomed pot.
Fry the sliced onions until golden brown (set aside some for garnishing)
